What I eat after my 9 to 5: Baked Apple and Apricot Crumble

Cost: $6 approx in total!
Time taken: 10 minutes plus baking
Serves 5(ish)
Ingredients:
3 cups of Rescued Fruit from your Foodprint Fruit and Veg box.
2 tbsp sugar
Pinch of cinnamon
100g softened butter
1/2 cup sugar
1/2 cup all-purpose flour
1/2 cup of additional ingredients (macadamia nuts, oats, or more flour)
Recipe:
Preheat the oven to 160°C fan (or 180°C conventional). Grease an ovenproof dish with butter.
Peel and dice the 3 cups of fruit. Use whatever you want - I had apples, pears and apricots! Toss with 2 tbsp sugar and a pinch of cinnamon, then place the fruit mixture in the prepared dish.
For the crumble, mix together 100g softened butter and 1/2 cup sugar until combined.
Add in 1/2 cup all-purpose flour and 1/2 cup of additional ingredients (macadamia nuts, oats, or more flour). Mix with your hands until it forms a doughy, cookie-like texture.
Scatter the crumble mixture over the fruit evenly.
Bake in the oven for around 45 minutes, until the fruit is soft and the crumble is golden and crisp. Be sure to keep an eye on it so it doesn’t burn like mine did haha
Serve warm with cream, ice cream or custard!
