Rescued Banana Bread

Banana bread is a beloved afternoon treat for a reason, perfect with a cup of tea on a sunny Sunday afternoon. Our recipe combines pantry staples with rescued ingredients to create a moist, tasty loaf.


Ingredients:

70 grams butter or vegan butter

30 grams of rescued yogurt

½ cup brown sugar

½ cup white sugar

2 eggs or 2 tbsp flax egg

1 tsp vanilla

1 cup milk

1 tsp baking powder

3 rescued bananas, mashed

1½ cups rescued flour, we used a mix of oat and chickpea flour

½ cup rescued coconut (you can substitute this for flour if needed)

1 tsp cinnamon

½ teaspoon nutmeg

½ cup rescued chocolate


Directions:

  1. Preheat oven to 180 degrees bake.

  2. Beat together butter, yogurt and sugar. Once combined, beat in eggs.

  3. Stir in mashed bananas, milk and vanilla.

  4. Sift flour, baking powder, cinnamon and nutmeg together, mix into wet ingredients until just combined.

  5. Stir in the chocolate.

  6. Bake for 45 minutes.

  7. Remove from the tin and cool on a wire rack.

  8. Serve warm with your favourite spread.
