One Potato Two, Putting a Kiwi Twist on a Classic

Meet Christina, owner of One Potato Two, who serves the best stuffed potatoes in Ōtautahi, Christchurch. One Potato Two puts a Kiwi spin on a classic dish by cooking their potatoes in a Hangi cooker.


“At One Potato Two, we offer the best stuffed potatoes in town,” Christina says. “We cook them via the Kai Cooker, so we get that authentic Hāngī taste. We wanted to stay true to our roots, and using the Kai Cooker was the best way to honor that,” she explains. “It gives our potatoes a unique, earthy Hāngī taste—our little difference. Other people bake, we steam.”


When it comes to toppings, One Potato Two has a large and carefully curated menu that includes Loaded Mince, All Day Brekky, and Vegetarian Spud. But if you’re feeling adventurous or picky, Christina will let you customise your potato “You can choose your own toppings or you can let us choose for you, because one potato two is here for you”, she says. If you rescue one from the app, you might get a whole different mix of toppings based on what’s available on the day. But one thing is for sure - what ever toppings you get, will be placed on top of a generous knob of melting butter. 



One Potato Two is more than just a business for Christina, it’s a family legacy. “My grandmother was Irish, and her family migrated here during the Great Potato Famine. She comes from a long line of potato farmers. When she arrived in New Zealand, she met my grandfather, my papa, and together they opened One Potato Two. Potatoes are in my blood! It was meant to be, and I just had to carry it on. And here we are.”


While her grandparents ran the business primarily as a food truck, Christina and her husband wanted to find a permanent home for their business. In late 2024, they jumped at the opportunity to take on a location inside Eastgate Mall, in Linwood, which is where you’ll find them every day and occasionally on the app.
