Kitchen Sink Cookies

They’re called kitchen sink cookies because you can throw in everything but the kitchen sink, just use whatever you’ve got in the pantry! We used a range of rescued ingredients along with what was in our pantry.


Ingredients: 

130g Greek yoghurt (you could also use butter or vegan butter instead)

1 cup brown sugar

½ cup white sugar

1 tsp vanilla

1 rescued egg or 1 flax egg

⅓ oil (any type of cooking oil will work)

½ rescued sliced almonds (you can use any sliced nut or oats)

1 ½ cups flour (we used a combination of rescued oat and chickpea flour)

2 tsp baking powder

1 tbsp rescued jam or more yogurt

200 grams rescued chocolate or rescued currents (anything will do!)

 

Instructions:

  1. Preheat the oven to 180 degrees.

  2. In a large bowl, combine yogurt, sugar, vanilla, oil and egg, beat until smooth.

  3. Add almonds, flour and baking powder and mix until combined. If the mixer is too dry, add more cooking oil. 

  4. Mix in jam.

  5. Add in chocolate, currants or any other add-ins. Mix.

  6. Spoon tablespoon-size portions onto a lined tray, making sure to leave plenty of space between cookies.

  7. Bake for 20 minutes, then cool on a wire rack.
