Gluten Free Dairy Free Air Fryer Banana Cake

Ingredients:


Cake:

  • 150 grams of vegan gluten-free ice cream, melted (Little Lato has an amazing array of options) 

  • 1 tsp vanilla

  • 3 rescued ripe bananas mashed

  • 1 chicken egg or flax egg if you want to make it vegan

  • 1 cup gluten-free self-rising flour

  • ½ cup rescued sliced almonds 

  • 1 tsp gluten-free baking powder


Icing:

  • 1 cup icing sugar, we made our own by blitzing 1 cup of regular sugar

  • 1 tbsp vegan butter

  • 2 tbsp gluten-free cocoa

  • 1-2 tbsp hot water


Recipe:


  1. Combine the melted ice cream, vanilla, and mashed bananas in a large mixing bowl

  2. Beat the egg and add it to the wet mixture, mix until combined

  3. Mix in flour, almonds and baking powder

  4. Pour the mixture into a lined or greased air fryer-safe cake tin

  5. Cook in an air fryer at 180 degrees for 30 minutes. Depending on your air fryer model, you may need to preheat it first. If you don’t have an air fryer, you can bake the cake in an oven for 30 minutes on fan bake

  6. Cool cake on a wire cooling rack


Icing:

  1. Combine all ingredients and mix until smooth

  2. Smooth over the cake and cool in the fridge until ready to serve
