Brown Butter Potatoes

2kg Agria potatoes
250g Butter, cubed
A handful of spring onions
½ cup cooking oil
Sea Salt
¼ cup grated parmesan
Instructions
Preheat oven to 200 °C fan bake
Wash the potatoes and cut them into bite-sized pieces.
Bring a large pot of water to a boil, add in sea salt and potatoes, and cook until the potatoes are tender.
While the potatoes are cooking, pour ¼ cup of cooking oil into two oven trays and put them in the oven to heat the oil.
Drain the water from the potatoes, then shake the potatoes in the pot to rough them up; this will help them to crisp up in the oven.
Remove the oiled trays from the oven and carefully divide the potatoes between the two trays, ensuring they are spread out evenly.
Sprinkle sea salt over the potatoes, then bake in the oven for 40 minutes, or until crispy. Make sure to flip over the potatoes halfway through to ensure both sides get crispy.
While the potatoes are cooking, add the butter to a small saucepan and bring to a gentle boil. Reduce the heat and allow it to simmer until it turns a golden brown colour and begins to crystallise. Remove from heat and set aside.
Remove the potatoes from the oven and transfer them to a large serving dish.
Spoon over half of the burnt butter, sprinkle over the spring onions, sea salt and grated parmesan. Spoon over the remaining butter.
Serve with your next Sunday roast or enjoy them on their own!
